Cooking with Pork scotch fillet?

Pork is always good cooked with fruit and maybe honey. Great with a Mustard sauce. Goes great with Mushroom gravy or Mushroom Jus (made with several types of mushrooms and a red wine reduction). You can also sliver them with Garlic or stuff them with a Vegetable mix, season and roast.
